Premium parcels of Pemberton Chardonnay and Pinot Noir were hand picked, whole bunch pressed and co-fermented. Made in the traditional method, this sparkling displays a delicate red berry, Royal Gala apple and fig nose, fresh vibrant acidity and cashew nut, pastry nuances.
Hand picked Margaret River Chardonnay was whole bunch pressed to a new French oak puncheon for barrel fermentation, monthly batonage and eight months maturation to produce a seamless, expressive and varietal style.
This hand picked Margaret River Riesling is bright, displaying lifted notes of lemon zest and grapefruit leading onto a palate of freshly squeezed lime juice and mineral notes supported by a fine acid backbone to ensure long cellaring potential.
Sourced from the Frankland sub-region of the Great Southern, open fermented for ten days on skins before pressing to a new French oak puncheon to complete fermentation and eighteen months maturation. Aromas of black cherry, liquorice and spice lead to a palate of intense black fruits woven around ripe tannins.
Hand picked Margaret River Cabernet Sauvignon was cold soaked, fermented for ten days on skins in small one tonne open fermenters before eighteen months in maturation in new French oak barriques. Mint, blackcurrant with a complex mid palate, finely structured tannins and long finish.
A deep caramel colour with a reddish hue. A heady mix of spice, cedar wood, toffee and liquorice lead to a palate of sarsaparilla, vanilla and kola nut, finishing with bitter chocolate. Aged in old Hungarian oak hogsheads (300lt barrels).
A deep amber colour with a khaki hue. This fortified dessert wine has developed a rancio character from over twenty years maturing in a large format traditional cask. Grilled nuts, Chinese five spice, treacle and coffee beans on the palate lead to a lifted spirit, burnt toffee finish.
A perfumed bouquet of caramel, intense raisin and toffee. Then palate displays cumquat marmalade, cloves, Christmas cake and orange zest. Matured for over twenty years in old 160lt bourbon barrels.
